Gina's Fried Cauli-Rice

Gina's Fried Cauli-Rice

Serves 1

Ingredients:

1/3 of a small cauliflower (more or less depending on how hungry you are)
1 egg, beaten and fried like a pancake, then sliced into thin strips
60g diced turkey ham (or bacon, or chicken, or regular ham),
sliced onion, your desired amount
sliced capsicum, your desired amount
1/4 tsp crushed garlic
1/4 tsp crushed ginger
1 handful of frozen peas and corn
chinese five spice
soy sauce

Method:

Using a food processor, finely chop the cauliflower. Place in microwave safe bowl and sprinkle with a few drops of water. Cover and cook on high for 2 mins, remove and stir, then re-cover and cook further 2 mins. Leave to cool slightly.

Saute onion, ham and capsicum until almost soft, add ginger and garlic and five spice mix, cook 1 minute, then add peas and corn and cook until they have defrosted. Next add sliced egg and soy sauce. Mix well to combine and heat through.

Serve on nice dinner plate and enjoy!!! YUM
