Chocolate Peanut Cookies

1/2 cup vanilla flavour protein powder
1/4 cup splenda
1/2 tsp baking powder
2 tbsp extra light olive oil
1/2 cup chopped unsalted peanuts
1 tsp vanilla essence
1 egg
2 tbsp smooth peanut butter
Pinch salt
1 chocolate fudge protein bar – chopped (I use the Protein FX ones)

Preheat oven to 180 degrees.
Mix all ingredients into a thick batter. Dollop teaspoons onto a greased cookie sheet. Bake for 8 minutes until just starting to turn golden. REmove from oven and cool for 5 minutes before transferring to a wire rack to cool completely.

These keep for AGES in a tupperware box. I make mine very small and then I can have two or three for a snack. Use sparingly – not for every snack!
