Baked Lemon/Chocolate Cheesecakes

500gm Ricotta
3 eggs
2 lemons (juice & zest) **
¼ cup splenda
1 tsp vanilla

Preheat oven to 180C.

Beat eggs then add all other ingredients and pour into your muffin tray (these ingredients make 12 muffins)

Bake at 160C for approx 25 minutes cool on paper towel and enjoy!!

**substitute lemons for 2 tbsp cocoa.
